My passion for cooking has really grown out of my love of eating – and boy do I love to eat! Food to me is pleasure; if it were just fuel we wouldn’t have taste buds. I am possibly the world’s messiest cook, but the results are (almost) always delicious, and I find it so enjoyable I can’t imagine a life without cooking.
Working at Fisher & Paykel as an industrial designer, I love gaining a deeper understanding for the science behind cooking. I am getting exposed to some incredibly talented people who share my passion for great food.
For this post, Jess and I teamed up to create some Mexi inspired treats from the grill. We both share a love of Mexican food – all those fresh and lively flavours, the colour and vibrancy of the ingredients – a trip to Mexico is definitely on both of our bucket lists!
Almost two years ago now, while travelling around southern Italy for a few weeks, we happened upon a small café in the town square of Catania, Sicily, with a counter stacked high with sweet treats. Choosing to forgo the famous cannoli, I bought the biggest doughnut I could find
I just got back from 3 weeks working out of our Italian office, tucked away among the medieval towns in Italy’s northeast, just over an hour inland from Venice. (Sometimes life is hard, ya know?)
I first made this recipe in late summer, as part of an experiment using indirect cooking on the grill (BBQ). I used a terracotta saucer as a pie dish which really worked a treat, crisping up the pastry perfectly. Searing the nectarines caramelises them slightly, bringing out their natural sweetness.
