Berry Good Dessert

Simply put this berry and white chocolate dessert is very, very good.  It’s super easy to make, beautiful and decadently delicious.   My mum can actually have the credit for this stunning little number after having sat up watching Food TV late one evening.  With an eye for a winner she duly noted down the recipe for a version of this dessert using frozen cherries.  The following evening I made my weekly pilgrimage to my folks place for dinner where I found myself forced against my will (yeah right) to be test animal for this berry version. The use of frozen berries means the taste of summer can make an appearance at any time of year and it literally appears out of nowhere in less than 5 minutes! The frozen berries set the sauce to the perfect consistency and the berries become the perfect icy sweet and juicy texture.  Good work mum, you have set the bar high now, better get your thinking cap on for next Sunday.

INGREDIENTS


250g (8.8 oz) white chocolate
300mL (10.5 fl oz) cream
1 Tbsp Cointreau or Grande Mariner
400g (14 oz) frozen berries

METHOD


1. Chop or break up the white chocolate into small pieces.
2. Bring the cream to a boil in a small saucepan.
3. Pour over the chocolate and whisk until the chocolate melts.
4. Add the liquor and mix well.
5. Divide the frozen berries among 6 serving dishes and drizzle the warm sauce over the top.
