There is little doubt that organising and making lunch can be low on the list of priorities in the chaos that often reigns on a weekday morning. Many people struggle to fit in breakfast, let alone even contemplate what might pass as their midday meal.

There is little doubt that organising and making lunch can be low on the list of priorities in the chaos that often reigns on a weekday morning. Many people struggle to fit in breakfast, let alone even contemplate what might pass as their midday meal.

I see weekday lunches as a challenge and as a general rule I seem fairly well adept at supplying myself with healthy, interesting creations four days a week (Friday is a special day in the industrial design studio when we head over to the local sushi joint for our weekly boost of omega-3’s). I go for lots of vegies and wholegrains, unprocessed, low-fat, high-protein foods. I hasten to add that it is only very infrequently that I default to tuna on toast!

As well as healthy lunches, I also love making healthy treats for morning and afternoon tea. Though I must admit I can never muster the self-control to save whatever it is I have made long enough to eat it for afternoon tea! My baking skills have evolved significantly since I have been working at F&P. I bake healthy things for home, and the more indulgent stuff I bring in to work to share with everyone, knowing it’s not at home tempting me. That way I get to try lots of recipes I wouldn’t normally cook for myself.
