Blue cheese & apple toasties

Makes 8 large toasties

Come lunchtime, I find that more often than not (if the spoils of last nights meal do not await) I pull a few slices of bread out of the freezer, toast them and then mere minutes later generously spread them with peanut butter (organic and crunchy of course!).  Whilst strangely I don’t seem to tire of it, it is not the most inventive of lunches.  These blue cheese and apple toasties on the other hand are.  The tangy flavour of the blue cheese is beautifully balanced out by the sweetness of the apple, and the walnuts add a welcome crunch.  The parsley adds a light freshness to the recipe though I implore you to explore different herbs too.  The mixture I had leftover after this shoot we ended up using as garnish on homemade baked beans.  Sprinkled with fresh marjoram it proved a particularly delicious combination!

I hope these toasties bring a bit of variation to your lunchtime repertoire like they have to mine!

INGREDIENTS


1 apple, grated
1 shallot, finely chopped
100g blue cheese, crumbled
50g walnuts, copped
2 tbsp parsley, plus extra for garnish
Salt & pepper
1 loaf white sourdough

METHOD


1. Place the apple, shallot, blue cheese, walnuts and parsley in a bowl and season to taste. Mix well to combine.
2. Slice the bread and place about 1 tbsp mixture onto each piece, spreading it out with the back of the spoon.
3. Place under a hot grill and cook until golden brown and bubbling. Serve scattered with extra chopped parsley


*Try swapping out the blue cheese for a tasty cheddar, or adding mayo to the mixture.
