This recipe is a family favourite. It is a quick, easy and deliciously tasty dip which is packed with vitamins and minerals so, unlike many other dips, it is actually good for you! I most recently served this with olive oil crackers, the recipe for which I will post tomorrow.

Carrot dip

INGREDIENTS

500g carrots
3 tbsp olive oil
2 tbsp wine vinegar
2 cloves garlic, chopped
3 tsp cumin seeds, toasted and ground
½ tsp ground ginger
½ – 1 tsp chilli powder
Salt to taste
METHOD

1. Peel the carrots and chop them into roughly 5 pieces. Place in a saucepan of water and bring to the boil. Reduce heat and simmer until cooked. A good way to test this is to stick a sharp knife into one of the larger pieces.
2. Drain the carrots and blend them together with the remaining ingredients until smooth.
3. Serve with olive oil crackers.
