Croutons are a quick and easy addition to any good soup. Yet they provide such a lift of texture and buttery goodness that they become a mandatory addition to any good soup. I made these butter soaked garlic cubes to go with my chicken broth that I posted earlier to add some cholesterol to the mix. Because let’s face a little bit of cholesterol is good for you, but like all things in moderation.

Garlic croutons

INGREDIENTS

Ciabatta loaf
100g butter
3 garlic cloves finely chopped
2 Tbsp chopped parsley
METHOD

1. Pre-heat your oven on bake to 180°C.
2. Cut the ciabatta into 1 ½ cm cubes.
3. Melt the butter on high in the microwave and add in the garlic. The garlic should ‘fizz’ and become aromatic.
4. Pour the butter mixture over the ciabatta cubes and mix until all of the ciabatta cubes are evenly coated and soaked in butter. Sprinkle over the parsley and mix until evenly distributed.
5. Bake in the oven for 20 minutes or until the croutons are golden brown and crunchy.
