Spice rubs

Makes 1 cup of each rub

Christmas for me is synonymous with barbeques. After all, the 25th is usually far enough into the summer season that you can almost be guaranteed a hot, sunny day to spend cooking and eating outdoors. And if the day itself doesn’t deliver, you can always look forward to a few weeks of summer holiday ahead. These spice rubs make really lovely gifts presented in a pretty glass jar with a festive bow. Give the gift of delicious grilling to your nearest and dearest this year!

The Star Anise and Coffee spice rub is great with steak, while the chipotle and ancho chili rub is perfect with pork, chicken, or even sprinkled over grilled veggies.

 

INGREDIENTS

Star anise and coffee spice rub
3 whole star anise
6 tbsp coffee beans
3 tbsp black peppercorns
3 tbsp flaky sea salt
2 tbsp brown sugar

Chipotle and ancho chilli spice rub
3 whole dried chipotle peppers (deseeded if desired)
2 whole dried ancho chilles
1 tbsp whole all spice
2 tbsp brown sugar
1 tbsp rock salt
2 tbsp dried oregano
1 tbsp garlic powder

METHOD

Star anise and coffee spice rub
1. Grind all ingredients together in a mortar and pestle.
2. Store in an airtight jar(s) for up to a month.

Chipotle and ancho chilli spice rub
1. Grind chillies, all spice, sugar and salt together in a mortar and pestle.
2. Add oregano and garlic powder and mix through.
3. Store in an airtight jar(s) for up to a month.
