It’s time to say a toast to the end of 2015 – and what better drink to do it with than a delicious and refreshing Violet Fizz cocktail!

This cocktail has all the elements for the perfect summer drink – gin (obviously), mint and cucumber, and the beautifully delicate Crème de violette. Subtle and fragrant, it tastes like summer in a bottle, and its beautiful purple colour makes for a gorgeous looking drink too.

2015 has been a year of big changes and new challenges for me, not least of all joining the Fisher & Paykel Dunedin office, getting involved with the blog, and getting to know all the wonderful people that make up the team here.

So here’s to delicious food, unexpected flavours and mad cooking experiments, to great colleagues, and – most importantly – to fresh starts and new beginnings. Happy New Year xx

INGREDIENTS


60mls Gin
30mls Crème de violette
30mls fresh lemon juice
2 tsp sugar
Ice
Soda water
Cucumber
Mint

METHOD


1. Combine gin, Crème de violette, lemon juice and sugar in a cocktail shaker with ice and shake well.
2. Fill a tall glass with ice, sliced cucumber and fresh mint leaves. Rub the mint leaves gently between your hands before adding – this helps to release the flavour.
3. Strain the ingredients from the cocktail shaker over the cucumber, mint and ice. Top with soda water, stir, then enjoy!
